Pasta with Salmon and Lemon

  • 16 oz. Pasta Lensi Fusilli
  • 4 Tbsp. extra virgin olive oil, divided
  • 2 salmon fillets (about 8 oz. each)
  • 2 Tbsp. butter
  • 1 cup red onion, chopped
  • 1/3 cup red bell pepper, chopped
  • 1/4 cup vegetable stock
  • 2 Tbsp. capers, rinsed and drained
  • 1/4 cup fresh parsley, chopped
  • 2 Tbsp. fresh dill, minced
  • Salt and black pepper, to taste
  • 5 Tbsp. lemon juice
  • Grated zest of 1 lemon

Cook pasta according to directions. Drain.

Heat 2 Tbsp. oil a large skillet over medium-high heat. Place salmon in skillet, skin side down. Cook for 7 minutes or until skin is crisp and golden brown. Turn salmon and cook for 2 to 4 minutes or until fish flakes easily. Remove fish to a platter and keep warm.

Return skillet with drippings to medium-high heat. Add remaining oil and butter. Add onion and red pepper and cook, stirring frequently, until onion is tender. Stir in vegetable stock, capers, and herbs. Season to taste with salt and pepper.

Remove skin from fish and discard. Cut salmon into 1-inch pieces. Return fish to skillet. Cook for 1 minute to reheat fish.

Remove skillet from heat and add lemon juice and lemon zest. Add pasta and toss gently to combine. Mangiare bene.
