Mediterranean Pasta Salad

 AIPC Foodservice Spaghetti


  • 16 ounces Foodservice Penne
  • 1 pound fresh green beans, trimmed
  • 2 pounds plum tomatoes, diced
  • 1/4 cup olive oil
  • 1 tablespoon lemon juice
  • 2 (12.5 ounce) cans water-packed tuna, drained and flaked
  • 1/2 cup fresh basil, cut into thin strips
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sliced, pitted black olives
  • Salt and pepper to taste

Canned tuna is a must-have in the pantry. Adding tuna to pasta salads adds protein and flavor to the recipe. A light oil and lemon juice dressing lighten up the pasta salad, giving it a crisp, fresh taste.

    1. Cook pasta according to package directions. Drain and rinse pasta under cold water; chill.
    2. Cook green beans just until crisp-tender.
    3. Drain and cool beans quickly by rinsing under cold water.
    4. Combine all ingredients in a large bowl. Refrigerate until ready to serve.
