Italian Pasta Salad Supremo


 AIPC Foodservice Whole Wheat Rotini

Ingredients

  • 16 ounces Foodservice Garden Rotini
  • 1 cup medium green peppers, diced
  • 1 cup medium red peppers, diced
  • 8 ounces Genoa salami, cut julienne
  • 8 ounces Capicola ham, cut julienne
  • 8 ounces provolone cheese, cut julienne
  • 3 tablespoons sundried tomatoes, chopped fine
  • 1 tablespoon fresh garlic, minced
  • 1/3 cup grated Parmesan, imported
  • 4 each pepperoncini peppers, chopped fine
  • 4 each Roma tomatoes, diced
  • 1/2 cup fresh basil chopped
  • 3/4 cup extra virgin olive oil
  • 3/4 cup balsamic vinegar
  • 1 tablespoon honey
  • Salt and black pepper to taste

 

Everything but the Italian kitchen sink is included in this pasta salad recipe.

Directions

  1. Cook pasta according to package directions.
  2. Place all the above ingredients in a large mixing bowl. Toss thoroughly and refrigerate.
