Reheating Pasta
Reheating Procedure 1—Re-boil

- Bring pot of water to a boil.
- Find a colander that will fit inside the pot with the portioned pasta and place into the boiling water for 30-45 seconds.
- Shake off excess water, put in hotel pan and serve.
Reheating Procedure 2—sauté, Cook to Order
- Heat olive oil or butter in skillet.
- Sauté vegetables or recipe ingredients.
- Add spices and herbs.
- Add liquid...stocks, broths, cream, wine, tomato sauce, prepared sauce, etc.
- Let all ingredients simmer.
- Add pasta directly to the skillet with the sauce and other ingredients.
- Portion in warm bowl or plate, sprinkle with grated cheese and immediately serve.
This method is used by most fine-dining restaurants, and can also be used for buffet service.
